VEGETABLE SALAD

3 medium tomatoes, cut in bite size pieces
1 head cauliflower, cut in bite size pieces
1 bunch broccoli, cut in bite size pieces
1 jar of broken up olives
3 carrots, grated
1 env. of Italian dry dressing
1 large bottle of Wishbone Italian dressing
1 green pepper
1 large onion

Mix all together, and chill before serving.



THREE BEAN SALAD

1 cup vinegar
2 Tbsp. wesson oil
Mix and let stand.
1 sweet onion, sliced
1 can green beans, drained
1 can yellow beans, cooked and drained
1 small can kidney beans, rinsed and drained

Mix and pour dressing over salad.



COLE SLAW DRESSING

1 cup sugar
Salt and pepper to taste
1 egg
1 cup sugar
1/4 cup vinegar
1 Tbsp. butter
1 Tbsp. celery seed
One small onion
1/4 cup water

Cook until thick. Add 1 cup Mazola oil, 1/2 cup salad dressing (Miracle whip), beat very well. Will keep a long time in the refrigerator.


CABBAGE SALAD

Shred 1 large head of cabbage. (Can also use peppers, onions and carrots)
Sprinkle with salt - (1/4 cup).

Pour boiling water over, let cool, then squeeze out vegetables.

MIX TOGETHER: 1 cup sugar, 1 cup vinegar, 1/2 cup water (opt.), 1 tsp. mustard seed, and 1 tsp. celery seed. Pour over vegetables. Keeps well in refrigerator. May also be frozen.



BROCCOLI SALAD

2 heads of broccoli

1 lb. bacon
1/2 cup chopped onion
1 cup mayonnaise
1 cup raisins
1/3 cup sugar
1 cup sunflower kernels
1 Tbsp. vinegar

Fry & drain bacon. Use broccoli flowers. Break into bit size pieces. Add onion, raisins, sunflower kernels and crumbled bacon. Mix sugar, mayonnaise and vinegar. Pour over and stir. (You may use cauliflower instead of broccoli or a combination of each).



POTATO SALAD (serves 10-15 people)

5 lbs potatoes, boiled, skin on, then slice
6 eggs, hard boiled and chopped
1 onion chopped

Mix the following and stir in to potatoes, eggs, and onion:
2 C Miracle Whip
1 T Vinegar
1/2 T yelllow mustard
1/3 C sugar


SEVEN LAYER LETTUCE SALAD

1 head lettuce, chopped
1 green pepper, diced
1 box frozen peas
4 1/2 oz grated cheese
2 C Mayonaisse - spread to cover and seal above ingredients
2 T sugar - sprinkled on top
8 strips bacon, crumbled and sprinkled on top

Make one day ahead and toss just before serving
