BREAD PUDDING
2 cups stale bread
1/2 tsp. salt
1 qt. Milk
1 tsp. vanilla
1/3 cup sugar
1/4 cup melted buffer
2 eggs beaten
1/2 cup raisins

Scald milk. Pour over bread crumbs. Cool, add eggs, put raisins in milk and they will get plump. Bake about 1 hour in 350 oven. Cover dish first 1/2 hour. Uncover and finish baking. Pour the following hard sauce over the pudding: cream 1/3 cup soft butter, beat in 1 cup sifted powdered sugar until light and creamy, add 1/ 2 tsp. vanilla drop by drop. If this curdles, add I tsp. water drop by drop.



STEAMED RICE PUDDING

3 cups milk
1/2 cup rice, not cooked
1/2 tsp. salt
3/4 cup raisins
1/4 cup sugar
2 tsp. vanilla
Pinch nutmeg
Light cream or 1/2 & 1/2

Bring milk just to a boil in top half of a 1 1/2 qt. double boiler.
Add uncooked rice and salt. Cover and cook over boiling water 1 hour, stir in raisins, sugar and vanilla. Add water to bottom pan as needed. Serve warm or cooled. Spoon into individual dessert dishes, sprinkle with nutmeg and pour cream over each serving. Makes 5 to 6 servings.



APPLE SPICE CAKE

3 eggs
2 cups sugar
112 cup oil
1 tsp. salt
1 tsp. vanilla
2 tsp. soda
2 tsp. cinnamon
2 cups flour
3/4 cup walnut meats
4 cups chopped apples, do not peel

Frosting
1 stick margarine, softened
1 tsp. vanilla
3 oz. cream cheese, softened
1/2 cup finely chopped nuts
1 lb. pkg. powdered sugar
Beat well.

Mix this recipe by hand. Beat the eggs, add sugar and oil. Sift together the dry ingredients and add to the above (this will be a very thick barfer), add the nuts and chopped apples. Bake in a 9 x 13 greased and floured pan for 45 minutes at 350 or until done when tested. Frost with cream cheese frosting when cooled.



CHOCOLATE CAKE

2 cups sugar
1 cup shortening
1/2 cup cocoa
1 tsp. vanilla
2 eggs
1 cup sour milk
2 cups flour
2 tsp. soda
1 tsp. salt
1 cup boiling water.

Mix cocoa and sugar. Cream mixture with shortening. Mix in eggs and vanilla. Add milk, mix flour, soda and salt and add to mixture. Add water and mix well. Bake in greased and floured 9 x 13 pan, at 350 for 35 minutes.


CARROT CAKE

Blend:
2 cups sugar
1 1/3 cups oil
4 eggs

Add:
2 cups flour
2 tsp. Soda
2 tsp. Cinnamon
1/2 tsp. salt

Fold in 3 cups grated raw carrots or 3 jars junior carrot baby food. Bake at 350 for 1 hour. Frost with Cream Cheese Frosting.

Cream Cheese Frosting
3 Tbsp. melted butter
3 oz. pkg. cream cheese
1 tsp. vanilla
1 1/2 cups powdered sugar



PECAN PIE

3 well beaten eggs
Salt
1 cup dark Karo syrup
112 cup white Karo syrup
Vanilla
1 Tbsp. Watkins pumpkin piespice
1 Tbsp. flour
2 Tbsp. butter
1 cup pecans, or English walnuts

Mix all ingredients together and pour into unbaked 9" pie shell. Bake at 375 for about 40 minutes.



MY FAVORITE PUMPKIN OR SQUASH PIE

1 unbaked pie crust
2 cups cooked pumpkin
1 1/2 cups evaporated milk
1/4 cup brown sugar
1/2 cup white sugar
1/2 tsp. salt.
1 tsp. cinnamon
1/2 tsp. ginger
1/4 tsp. nutmeg or allspice
1/8 tsp. cloves
2 slightly beaten eggs

Bake 15 minutes at 425. minutes
Reduce heat to 350 and bake for 45



RAISIN AND HONEY PIE

1 cup raisins, cooked
1/2 cup honey
1 Tbsp. Butter
1/4 cup chopped nuts
1 Tbsp. Flour
1/2 cup water
1 egg yolk

Cook raisins in 1/2 cup water, add honey, butter, egg yolk and flour. Mix well and cook together until thick. May be put in a double crust and baked or may be put in a crust already baked, and then use the egg white for meringue.



SOUR CREAM RAISIN PIE

1 cup sugar
1 cup raisins
1/2 tsp. cinnamon
1/4 tsp. cloves.
1/8 tsp. nutmeg
1/8 tsp. salt
1 cup sour cream
1 egg

Mix above ingredients together. Pour in mixture. for 15 minutes. Ionger. Cool. Line 8 inch pie plate with pastry. Place lattice pastry strips over top. Bake at 450 Reduce heat to 350 and bake for 15 minutes



SPICE CAKE

2 eggs
1 cup corn syrup
1/2 cup sorghum
1 cup sour cream
1 tsp. soda
2 1/2 cups sifted flour
1 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. cloves
1 cup raisins
1/2 tsp. Salt

Beat yolks of 2 eggs, add the syrup, sorghum, cream, soda, and salt. Sift all dry ingredients and add to the first mixture, add raisins, stir well. Then add the two egg whites, which were beaten stiff. Bake about 35 minutes at 350 or until done.
