Add dry ingredients. Pour into 3 greased & floured loaf pans. Bake 1 hour at 325. ZUCCHINI BREAD 3 eggs 1 tsp. salt 2 cups sugar 1 tsp. soda 1 cup oil 1/4 tsp. baking powder 2 cups raw grated zucchini, peeled 2 tsp. Vanilla 3 tsp. cinnamon 3 cups flour 1 cup chopped nuts Beat eggs until light and foamy. Add sugar, oil, zucchini and vanilla. Mix lightly but well. Combine flour, salt, soda, baking powder, and cinnamon. Add to zucchini mixture, stir until well blended. Add nuts and pour into two greased bread pans. Bake 1 hour at 350, no need to peel zucchini if young and tender. NORWEGIAN CHRISTMAS BREAD 2 cups sugar 1 tsp. soda 1/2 cup shortening 2 eggs 4 cups flour Pinch of salt 1 tsp. baking powder 2 cups buttermilk 1 tsp. lemon extract 1 tsp. vanilla 1 1/2 cups mixed dried fruit Mix and bake in 350 oven for about 50 minutes. Makes 2 large loaves. BANANA BREAD 1 cup sugar 1/2 cup shortening 2 1/2 cups flour 2 eggs 3 mashed bananas 2/3 cup sour milk 1 tsp. soda - dissolved in a little water Mix in order given. Bake at 350 for 1 - 1 1/2 hours. Makes 1 loaf. RAISIN BREAD 1 cup seedless golden raisins 1 3/4 cups water 1/3 cup shortening 2 pkgs. yeast 1/3 cup brown Sugar 1/2 tsp. ground ginger 1/2 tsp. cinnamon 2 cups white flour 2 cups whole wheat flour 1/3 cup wheat germ Combine raisins, 1 1/4 cups water, and shortening. Heat to boiling, stir until shortening melts. Remove from heat, cool to luke warm, add yeast to remaining 1/2 cup warm water, add sugar, spices and 1 cup flour. Mix well, and add raisin mixture gradually. Mix in remaining flours and wheat germ. Turn onto a well floured board and knead 3 minutes. Return to mixing bowl. Brush top of dough with oil. Cover and let rise until doubled, about 1 3/4 hours, punch down and shape into loaves. Brush tops with oil. Let rise about 45 minutes. Bake 45 minutes at 350. CORNBREAD 1 cup flour 1/2 cup sugar 4 tsp. baking powder 1 tsp. salt 1 cup cornmeal 2 eggs 1 cup milk 1/4 cup salad oil Put all dry ingredients in a bowl and mix in wet ingredients. Bake in greased and floured pan and bake at 425 for 20 - 25 minutes. DATE NUT BREAD 1 cup sugar 2 Tbsp. shortening 1 egg 1/2 cup chopped dates 1/2 cup chopped nuts 1 tsp. soda in 3/4 cup hot coffee or water 1/2 tsp. baking powder 1 1/2 cups flour 1/4 tsp. salt Mix in order given. Grease pan. Bake 1 hour or until done in 350 oven. |
